WatermelonIf you could think of two foods that epitomize summer refreshment, what would they be?

Watermelon and lemonade would definitely be at the top of my list. So naturally, I was excited to find this simple recipe for Watermelon-Lemonade Ice Pops courtesy of the Bon Appétit web site.

If your kids are anything like mine, they love frozen treats on a hot summer day. In fact, my husband acts a bit like a very large child in this regard – he totally craves popsicles and eats them disturbingly fast. So I made up these ice pops this morning and stuck them in the freezer, then tried them out on my family tester panel this afternoon.

LemonadeMy five-year-old daughter took one lick and declared that her popsicle was “too lemon-y.” (Yes, a can of frozen lemonade tends to have that effect.)

I quickly took over testing operations for her popsicle, and was pretty pleased with the result. Based on how quickly my eight-year-old daughter and husband devoured their own, I would say that they’re a hit. (Three out of four ain’t bad, right??)

Best part? Only four ingredients. Enjoy!
